Reduced-Calorie Breaded Chicken: Uses low-carb flour and is not fried. It is dry and very crunchy




A chicken breaded with low carbohydrate flour, very crispy, without frying.

Recipe for 2 people.

Chicken fillet steaks Ingredients:

– 400 g of cleaned chicken fillet – 2 units per person.

– lemon to taste (juice)

– Salt to taste

– pepper to taste THE

Ingredients Gluten-free/low-carb breaded option (flaxseeds and almonds):

– 1 egg, diluted with a little filtered water, or enough to cover

– 1/2 cup(s) golden flaxseed meal, or enough for breading

– 1/2 cup(s) almond flour, or enough for breading

– paprika to taste THE

– Salt to taste

Gluten-Free/Low-Carb Breaded Option Ingredients (Golden Flaxseeds):

– 1 egg, diluted with a little filtered water, or enough to cover

– 1 cup(s) golden flaxseed meal, or enough for breading

– Salt to taste

Ingredients FOR GREAKING

– oil to taste

PREPARATION:

  1. Start by preparing and seasoning the chicken fillets (see preparation).
  2. Set aside the other ingredients and utensils for the recipe.
  3. Grease the baking tray(s) with oil.
  4. Preheat the oven to 220°C.

PREPARATION:

Chicken fillet steaks (this step must be done before continuing preparation):

  1. Clean, if necessary, and cut the chicken fillet into steaks – 2 units per person, approximately 100 g each.
  2. Line a cutting board with cling film and also the meat whisk.
  3. Arrange the chicken steaks on the cutting board, cover with cling film and pound until thin and of uniform thickness.
  4. Season with lemon, salt and pepper.
  5. Set aside while the pre-prep is finished (item 2).

LOW CARB BREADED CHICKEN WITHOUT FRYING – bread and bake (check breading options in ingredients):

  1. Choose the breading: only with golden flax flour or with golden flax flour and almonds. Check the quantities in the ingredients.
  2. Place the golden linseed flour – or the almond flour and paprika – on a plate.
  3. In another dish, break the egg(s), 1 at a time, add a pinch of salt, dilute in a little water and beat. If necessary, repeat the operation, adding the quantity of eggs to avoid waste.
  4. Bread the steaks, first passing them in the diluted beaten egg(s) and then in the linseed flour (or almond flour and paprika).
  5. Transfer the breaded fillets into the oiled baking dish, without overlapping them.
  6. Drizzle the oil, in a zigzag pattern, over each steak to form that crispy crust.
  7. Place in a preheated oven at 220°C for 50 minutes, turning halfway through.

LOW CARBOHYDRATE BREADED CHICKEN WITHOUT FRYING:

  1. When the chicken fillets are cooked and golden, remove them from the oven.
  2. If necessary, dry them with absorbent paper to make them even drier.

FINALIZATION AND ASSEMBLY:

  1. Arrange the breaded chicken (low carb) without frying on a serving plate or, if you prefer, distribute it directly onto the plates.
  2. Serve with a salad of your choice or another side dish.
