In the vast universe of cooking there is a world of possibilities to explore, full of different ingredients and preparation techniques. In Brazil, potatoes reign as one of the most consumed foods, standing out for their incredible versatility in the kitchen. However, many are still not aware of the richness of the varieties of this tuber.




Tamiris Pitana, nutritionist of the Água Doce Sabores do Brasil restaurant chain, shares her tips and tricks for exploring the world of different potatoes and turning your recipes into true gastronomic experiences. Watch!

1. English potato

The most consumed by Brazilians, Potato English is rich in nutrients such as vitamin B, iron and calcium. With a starch content of up to 20%, the food is suitable for a wide variety of recipes, such as mashed potatoes, roasted and even fried.

Sweet potatoes are rich in fiber which slows down the digestion process.

A source of fiber and carbohydrates, the tuber is highly recommended for those who need to replenish nutrients in their diet. With purple skin and a sweet flavour, sweet potato it can be baked, boiled, fried and even made into chips to replace industrialized products.

3. Yacon potatoes

Well known in Japan, the tuber has an orange color and a sweeter flavor. It can be eaten raw or in salads and also in bread dough and spaghetti. For those looking for a healthier diet, potatoes are a good idea, as they are low in calories.

4. Baraka Potato

Considered dirty-looking, the baraka potato is native to the Netherlands and is found widely in open-air markets and small farmers’ markets. It is very suitable for the preparation of fried foods, given the low quantity of water, and can also be used in dishes that require cooking.

5. Asterix potato



The Asterix potato differs in its skin, which can be purple or pink.

Similar to the English potato, this type is distinguished by its skin, which can be purple or pink. With a drier texture and high starch content, the food is ideal for frying. Since it is light, it is best to avoid cooking or stewing it as it tends to swell and fall apart.

6. Baroa Potato

Known as cassava, the food has a yellowish color, a sweet flavor and a striking aroma. Narrower in shape than the English potato, the tuber is rich in vitamins A, B and C, as well as being versatile in the kitchen, and can be used in purees or roasts. It is also suitable for introducing children to food.

7. Potatoes meatball

Small in size, with a dry and light consistency, this type of potato is widely consumed as a snack or in pasta recipes, such as Gnocchi. There are those who use it to produce preserves, accompanied by onions and aromatic herbs, and subsequently served as an appetizer. There are variations in the color of its bark and it can be found in reddish, yellowish and purple tones. It is very similar to the English potato.
