CAULIFLOWER SMOOTHIE CAKE Ingredients:
– 1 unit of fresh cauliflower, large
– 2 units of eggs
– 1/2 cup(s) of lactose-free whole milk
– 1/4 cup(s) gluten-free oat flour (or gluten-free oat bran)
– 1 teaspoon(s) of chemical yeast w
– Salt to taste
– pepper to taste w
Ingredients FOR GREAKING
– olive oil to taste
Ingredients TO FINISH
– 1/2 tablespoon(s) of grated lactose-free parmesan, or as desired
PREPARATION:
- Put a pot of water to boil.
- Start by cooking the cauliflower because it needs to cool (see preparation).
- While the cauliflower cools and before preparing the dough, prepare your favorite filling for the tart and let it cool.
- Set aside the other ingredients and utensils for the recipe.
- For 2 portions, use a refractory pan with a diameter of 15 cm and a height of 7 to 10 cm (tall cake). Grease the refractory with olive oil.
- Preheat the oven to 180°C.
PREPARATION:
Cauliflower – Cooking:
- Remove the cauliflower leaves and divide them into florets.
- Place the florets in a colander and wash them under running water.
- Cauliflower can be cooked in 2 ways:
- Steaming – Season the cauliflower with a little salt and place the steam rack over the pan of boiling water, cover and cook for about 10-15 minutes or until very tender.
- Traditional cooking: when the water boils, add the salt and the cauliflower florets and cook for about 10-15 minutes or until they are very soft.
- When it is cooked, transfer the cauliflower to an auxiliary plate, spreading it well, to cool.
- Continue pre-preparation (step 3).
CAULIFLOWER SMOOTHIE CAKE:
- Place the cooked, cold cauliflower, eggs, lactose-free milk, gluten-free flour or oat bran, salt and pepper in a blender.
- Beat until a homogeneous mass forms.
- Turn off the blender and add the yeast.
CAULIFLOWER SMOOTHIE CAKE – Assemble and Cook:
- In a bowl, mix the cauliflower mixture with the filling of your choice.
- Transfer to the greased pan and sprinkle with grated lactose-free parmesan.
- Bake in a preheated oven at 180°C and cook for about 45 minutes or in any case the time necessary for it to be golden on the surface and completely cooked.
- To make sure the cake is cooked, insert a toothpick into the center of the cake, if it comes out dry it is ready.
- Once fully cooked, remove the pan from the oven.
FINALIZATION AND ASSEMBLY:
- It is used for cauliflower puree cake in the refractory pan itself or, if you prefer, cut it into small pieces and distribute it on the plates.
