Very light and tasty wheat-free sweet potato gnocchi

Ingredients GLUTEN-FREE SWEET POTATO GNOCCIA
– 500 g of sweet potatoes
– 2 units of eggs (yolks only)
– 50 g of grated lactose-free parmesan
– 1/4 cup(s) potato starch + a little to flour the counter
– 1/4 cup(s) cornstarch + added little by little or as needed to mix
– Salt to taste
– nutmeg to taste, grated THE

PREPARATION:
- Start by cooking the sweet potato (see preparation).
- Separate other ingredients and utensils from the recipe.
- Finely grate the cheese, if you didn’t buy it grated.
- Prepare your favorite sauce to serve with the gnocchi.
PREPARATION:
Sweet Potato – Cooking in the Microwave:
- Wash and dry the sweet potato.
- Peel them and cut them into thick slices.
- Arrange on a plate, moisten the potatoes with a little water and cover with another plate or glass bowl.
- Cook in the microwave for 5 minutes and if necessary increase every 2 minutes until the potatoes are soft.
Gluten-free sweet potato gnocchi – PREPARATION OF THE DOUGH:
- Place a pan with water on the heat to cook the gnocchi.
- When the sweet potato is cooked and very soft, mash it with a fork or pass it through a potato masher.
- Let it cool a little to continue.
- For an even more delicate result, if desired, pass the sweet potato through a large sieve.
- Place the mashed or squeezed sweet potatoes and cool them in a bowl.
- Add the egg yolks, salt and grated nutmeg (optional).
- First add the potato starch and the grated lactose-free cheese and mix well.
- Then add half the cornstarch, mix again and reserve the rest.
- Check the cooking of the dough: it should be soft and homogeneous.
- Test the cooking by forming a ball: if it is perfect, move on to the shaping phase, otherwise add a little more of the corn starch set aside.
Gluten-free sweet potato gnocchi – SHAPE and COOKING:
- Add salt to the water and boil it again.
- Flour the counter surface.
- Take a portion of dough and make 1 roll.
- Cut only 1 gnocchi and cook to see if the dough is cooked well, the gnocchi must be tender and not fall apart – firm outside and soft inside – if it falls apart, carefully add a little more corn starch so that it does not flakes do not attack, heavy.
- Cut the gnocchi into small portions at a time.
- Gradually add the portions to the boiling water.
- As soon as the gnocchi float to the surface, drain them with a slotted spoon.
- Drain and store in an auxiliary dish or in a colander.
- Drizzle the gnocchi with a drizzle of oil to prevent them from sticking.
FINALIZATION AND ASSEMBLY:
- When all the gnocchi are cooked, pour them over the sauce of your choice and mix carefully.
- Place the Gluten-free sweet potato gnocchi on a serving plate or, if you prefer, distribute among the plates.
