We tested ten brands of Colomba Pascal; check the ranking


Invited by the ‘Paladar’, the judges blindly tasted traditional recipes, with candied fruit




Easter isn’t just chocolate: there are those who prefer to put the eggs aside and dedicate themselves to the Easter dove. Cousin of panettone, the recipe should have a light, honeycombed and aromatic dough, with well-distributed candied fruit and a sweet, crunchy covering.

But will all the doves on sale this year achieve this result? OR Palate selected ten brands, found in supermarkets and bakeries, and invited experts to taste the recipes blind.

The jury was made up of Veronica Kim, from the By Kim pastry shop, Ale Sotero, pastry chef from Mocotó, Vinícius Pires, chef and former Evvai, who is expected to open his own restaurant soon, and Henrique Yukio, baker from Kio Bakehouse, who is scheduled to open opening soon. Without knowing the brands of doves selected by Palatethey evaluated aspects such as the visual appearance, aroma, quality and distribution of the candied fruit, as well as the humidity and density of the mass.

Colomba by Oli Pães wins the Paladar seal

The ten points in the judges’ judgment, in alphabetical order

Bauducco

The famous brand’s Colomba seems to have arrived timidly at the tasting: the judges were expecting a more striking aroma and flavour. I liked the sauce for its crunchiness, but was disappointed by its slightly excessive sweetness. And the fruit? They were happy with the quantity and size, but could have been distributed better (R$ 19.99; 400 g)

Swiss house

Tasting the Colomba, the judges confirmed a characteristic that they had already noticed visually: the mixture was too dense, despite having good humidity. The somewhat artificial and too sweet flavor stood out on the palate. The fruit, in turn, was well distributed in the dough, but there was little variety (R$ 26.99; 450 g)

Confeitaria Dama

The dove performed well in the tasting and came in second place on the podium! The judging team highlighted that the aroma was delicate and buttery and more reminiscent of a cake than a dove. However, the fermentation was good, which gave a touch of pleasant acidity to the mixture, and the fruits were varied and well distributed (R$ 125; 600 g)

Dona Deola

Covered in icing, the pastry shop’s dove did not enchant the judges. They pointed out that the dough, flavored with margarine and not very salty, was more similar to that of a loaf of bread than that of an Easter dove. The lack of crunchy topping was also disappointing (R$40.30; 500g)

To manufacture

The artisan bakery’s colomba won the bronze medal in the tasting. The beautiful appearance and light texture of the dough scored points. The topping, however, could be crispier (R$113; 680 g)

Marilan

The artificiality and excessive sweetness of the dough were not liked by the judges. Although they were well distributed, the fruits were not of good quality. The soft, texture-free coverage and density of the dove were also negative points for the final score (R$17.99; 450g)

Oli Paes

The colomba from the artisan bakery won not only the eyes of the judges, but also their palates – and thus secured first place in the ranking. “Beautiful” and “incredible” were some of the adjectives that the jury used to classify the sample. For experts, the soft texture and buttery flavor are reminiscent of brioche. It earned points because it contains high quality orange and fruit, with a natural flavor (R$ 93; 550g)

Panco

Despite having a pleasant moisture, the Colomba dough ended up turning into a paste in the mouth, due to its very dense consistency. The unobtrusive aroma, soft covering and low quality fruits also added negative points. One of the judges pointed out that the structure of the dough left something to be desired, as the central part of the dough fell away (R$ 27.50; 500 g)

Three Children

Almost: the brand’s Colomba Pascal hit the beam and narrowly missed the tasting podium. Its homemade and delicious aroma satisfied the jury. A positive point was also the crunchy shell, with a pleasant flavour, as well as the good quantity of fruit, well distributed (R$ 99.90; 500g)

Visconti

The jurors didn’t like the dove. Starting with the look, which wasn’t pretty and the lack of coverage weighed heavily in this sense. The aroma was notable because it was artificial. The dough, in turn, was too thick and sweet and turned into a paste in the mouth (R$24.90; 360 g)
