Tamale straw cake: recipe with a country flavour

Straw Tamale Cupcake

Time: 1 hour

Performance: 8 units

Difficulty: easy

Ingredients:

  • 6 ears of green corn
  • 1/3 cup (tea) water
  • 7 tablespoons of olive oil
  • 2 teaspoons of salt
  • 6 soft corn husks

Filling

  • 1/2 piece diced pepperoni
  • 1/2 cup cubed ricotta
  • Oregano for sprinkling

Preparation method:

  1. Using a sharp knife, remove the corn kernels from the cob.
  2. Blend in a blender with water until smooth.
  3. Add the olive oil, salt and beat just to combine.
  4. Meanwhile, use scissors to cut a corn husk and fit a basket inside medium-sized gingerbread molds, overlapping one another, coating the entire bottom and sides.
  5. In each lined mold, place the corn paste, a cube of sausage and a cube of cheese.
  6. Place the ramekins in a baking pan, sprinkle with oregano and then place in a preheated medium oven (180ºC) for 30 minutes or until golden brown.
  7. Leave to cool, remove from the mold and serve immediately.
