Risotto with pumpkin and cod

  • 1.6 kg of cod fillets, boned and desalted
  • 2 liters of water
  • 2 peeled garlic cloves
  • 2 bay leaves
  • 500 g of rice
  • 2 onions peeled and chopped
  • 100 ml of dry white wine
  • Salt, ground black pepper, thyme and olive oil to taste

Preparation method

In a pan, add the olive oil and place over medium heat to heat. Add the pumpkin and brown for 3 minutes. Turn off the heat, season with salt and black pepper and set aside. In another pan, add the water, garlic and bay leaves and heat over medium heat until boiling. Add the cod, reduce the heat, cover the pan and cook for 10 minutes. Drain and reserve the water and fish.

In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Add the rice, stir to combine, cover with the white wine and cook until dry. Then add the cooking water from the cod and pumpkin, cover the pan and cook until the water has dried. Turn off the heat, add the cod and stir. Season with salt and black pepper, sprinkle with thyme and serve immediately.

Preparation method

Line a baking dish with aluminum foil, add half the onion, drizzle with olive oil and set aside. Place the fish in a container and season it with lemon juice, salt and black pepper. Place it on top of the onions and scatter it around the potatoes and carrots. Salt the vegetables and finally add the pepper. Close the aluminum foil and place in the preheated oven at 200ºC for 40 minutes. Then carefully remove the top of the aluminum foil and place it back in the oven for another 5 minutes. Serve immediately.

  • 6 chopped strawberries

Preparation method

Melt the chocolate in a bain-marie. Then, she lines up the molds cupcakes with half of it, filling the bottom and sides. Place in the freezer for 15 minutes. Remove from the freezer, fill with peanut butter and strawberry pieces and cover with the rest of the chocolate. Place in the freezer for another 15 minutes. Serve immediately.
