Topokki Recipe

Ingredients:
- 1 cup glutinous rice flour
- ¾ cup rice flour
- 1 cup hot water
- 1 teaspoon of salt
Sauce
- 2 tablespoons gochujang
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon of sugar
- 3 sausages
- 1 cup filtered water
- A little bit of salt
- Sesame oil to taste
Preparation method:
- In a deep container, mix all the dry ingredients for the dough.
- Add the hot water little by little until you obtain a smooth mixture.
- Once the temperature is comfortable, knead the dough with your hands until it is smooth.
- Divide and shape the dough into 6 equal rolls.
- In each roll cut pieces up to 8 centimeters long.
- Meanwhile, bring water to a boil in a deep pan over medium heat.
- Using a slotted spoon, cook the gnocchi in hot water, taking care that they do not stick.
- As soon as the gnocchi float, remove them. Tip: It should cook for an average of 9 minutes. Also, when removing the dumplings, do not stack them.
- For the sauce, place the gochujang, garlic, soy sauce, sugar, soy sauce, sugar, water, salt and a drizzle of sesame oil in a pan.
