A super tasty brigadeiro, without condensed milk, with only 3 ingredients.

Ingredients BRIGADEIRO WITHOUT CONDENSED MILK (FROM YAM)
– 250 g of potato (after cooking, weigh 140 g for every 2 portions)
– 1/3 cup(s) demerara sugar
-50 ml of water
– 50g vegan/gluten-free semi-sweet chocolate
Ingredients TO DECORATE:
– 50g vegan/gluten-free semi-sweet chocolate, chopped or dusted/vegan pastry.
PREPARATION:
- With the standard recipe for 2 portions you get approximately 8 candies of 20 g each (weight once ready).
- Start by cooking the yam (see preparation).
- Chop vegan semi-sweet chocolate to decorate/roll or use sprinkles or sprinkles. Arrange on a plate or bowl. Reserve.
- Set aside the other ingredients and utensils for the recipe.
PREPARATION:
Brigadeiro without condensed milk – Cooking yam:
- Wash the yam, do not peel it.
- Place the yam in a pot filled with water.
- Cover and cook for 20-30 minutes until very soft.
- Then, drain the water, peel the yam, cut it into smaller pieces, weigh and separate the amount of cooked yam (140 g per 2 servings).
- Continue pre-preparation (step 3).
Brigadeiro without condensed milk (yam) – Beat:
- Boil some water in a kettle (see quantities in the ingredients).
- Place the cooked yam (can be hot) in the blender and add the boiling water (see quantities in the ingredients) and the demerara sugar.
- Whisk a lot – for about 3-5 minutes (the smoother it is, the brighter the result will be).
- While whisking, place the dairy-free/vegan chocolate in a non-metallic bowl.
- Place in microwave on medium-high power and melt every 30 seconds. Mix well with a spatula to make it smooth and free of lumps.
- After a few minutes, when you have obtained a very smooth mixture, stop beating the yam.
Brigadeiro without condensed milk (yam) – Cooking brigadeiro:
- In a pan, combine the melted chocolate with the fried potato mixture.
- Place over low heat, stirring continuously with a spatula.
- Cook, stirring constantly, for 5 to 10 minutes or until thickened and comes away from the bottom of the pan.
- When you remove it from the bottom of the pan, test the finish: check if the brigadeiro is very firm – lift the spatula and check if it runs. If it runs, leave it a little longer on low heat, stirring constantly, until you reach the point where lifting the spatula forms a v, without running.
- Turn off the heat and transfer to a plate. Cover with cling film and let it cool.
- Place in the refrigerator for at least 2 hours to harden.
Brigadeiro without condensed milk (yam) – Roll:
- Open the molds on a plate.
- Wet your palms with water.
- Using a (flat) teaspoon as a measure, take a portion of the dough and roll it into a ball: the approximate weight is 15 g each.
- Dip each ball in the chopped chocolate or sprinkles (previously set aside) to evenly cover the entire surface.
- Arrange the brigadeiros in the molds.
- Repeat the process until you run out of ingredients.
- Store covered and refrigerated.
FINALIZATION AND ASSEMBLY:
- To remove the brigadeiro(s) without condensed milk – of yam from the refrigerator just before consumption.
- Arrange on a serving plate and arrange the desserts well.
