Pork tenderloin mignon, in addition to bringing something new to your menu, is much more affordable than other types of meat. It is a type of meat that can be a wild card in your kitchen and combine in many ways, whether over a salad or even a sandwich.

In today’s tip I combined the fillet with this pumpkin puree which is very practical to make, it takes 10 minutes in the microwave and also helps to save gas because it does not need to be heated at any stage.

Ingredients:
It serves 2 people

Pork fillet:

⁃ 400 g of whole pork tenderloin mignon
⁃ 100 g of panko / bread flour
⁃ 1/2 cup of oil
⁃ 1 egg
⁃ Salt
⁃ Black pepper
⁃ Sweet paprika

pumpkin puree

⁃ 400 g of cabotiá pumpkin
⁃ 1 tablespoon of butter
⁃ Salt
⁃ Black pepper

Method of preparation:

Pork fillet:

1- Cut the fillet into two pieces and beat it with a kitchen hammer until you get the thickness of a steak, about 0.5 cm;
2- Season the fillets on both sides with salt and pepper to taste;
3- In a bowl, beat the egg with salt, pepper and sweet paprika;
4- Dip the fillets in the egg mixture with the seasonings and pass them on both sides, until they are completely covered;
5- In a plate / bowl add the panko / vine flour and pass the “steaks” on both sides, covering them with the flour;
6- Put it in a pan with hot oil, fry on one side then turn and finish the other side;
7- Remove excess fat with absorbent paper and serve.

Pumpkin puree:

1- Start by eliminating the pumpkin seeds;
2- Wrap the whole pumpkin with cling film, make holes with a fork or knife on both sides;
3- Take it in the microwave for about 10 minutes at maximum power (it may take a little longer in some microwaves, if you see that it is not completely cooked, increase the time by 2 in 2 minutes until it is soft);
4- Remove the pumpkin from the microwave, remove all the yellow part and remove the skin;
5- In a bowl mix all this pulp with butter, salt and pepper, now serve.
