Ingredients:
- 300 g cod fillet
- 6 medium potatoes
- 1 medium carrot
- 2 medium onions
- 1 clove of garlic
- ½ cup capers
- 2 tablespoons of olive oil
- Chopped parsley to taste
- Salt and black pepper to taste
Preparation method:
Heat the oil in a pan and brown the previously chopped garlic and onion. Add the carrots cut into slices and the potatoes cut into thin slices. Season with salt and pepper. Cover with water and cook over low heat for about 10 minutes. In the same pan add the cod and capers. Cover the pan and cook for another 15 minutes, being careful not to let the water dry out. Check that the cod, carrot and potatoes have the desired consistency and turn off the heat. If necessary, let it cook for a few more minutes.
