Scientists use artificial intelligence to ‘enhance’ the flavor of beer


Researchers in Belgium test technology to improve beer ratings




Artificial intelligence is already part of many people’s daily lives and is now being used in beer production in Belgium.

The main person responsible for this experiment is Professor Kevin Verstrepen, from KU Leuven University. According to him, artificial intelligence can help understand the relationship between aromas, based on studies of various components of beer The Guardian.

In the research, variables such as alcohol content, pH, sugar concentration and the concentration of over 200 different compounds involved in flavor are studied.

In the first phase, 250 analyzed beers were tasted by 16 participants in a tasting panel. Subsequently, another 180,000 reactions were obtained through the online platform RateBeer. Various components were analyzed in these evaluations.

With the different data sets, the researchers built AI-based models to predict the taste of the drink and its enjoyment, based on its composition.

They then used the results to improve an existing commercial beer by adding substances that the models reported as important and popular with consumers, such as lactic acid and glycerol.

The tasting panel results revealed that the additions improved the ratings of the alcoholic and non-alcoholic beers on metrics such as sweetness, body and overall enjoyment.
