Ratatouille Ingredients – Pan-fried vegetables
– olive oil to taste
– 1/2 piece(s) red onion, sliced or diced
– 1 clove(s) of garlic, chopped or crushed
– 1/4 unit of yellow pepper, without seeds and white part, cut into medium cubes
– 1/4 unit of aubergine cut into medium cubes
– 1 seedless tomato, cut into cubes or slices
– 1/4 of courgette, cut into cubes or slices
– sea salt to taste (or pink salt) B
– pepper to taste B
Ingredients TO COMPLETE:
– extra virgin olive oil to taste
– basil to taste (leaves) or another herb of your choice (optional)
PREPARATION:
- Separate all ingredients and utensils for the recipe.
- Start by cleaning and cutting the ingredients to prepare the ratatouille as indicated in the ingredient list.
- Soak the aubergine cut into pieces in cold water to prevent it from oxidising.
- Finally, wash the basil leaves or other herb of your choice and leave them on absorbent paper.
PREPARATION:
- In a pan, brown the onion and garlic in olive oil.
- Drain the aubergines well.
- Add the vegetables, in this order: the yellow pepper, the aubergines cut into pieces, the courgettes and, lastly, the tomato.
- Brown for a few minutes after each addition and season with salt and pepper.
- Turn off the fire.
FINALIZATION AND ASSEMBLY:
- Download the ratatouille – pan-fried vegetables – on a serving plate, or if you prefer divide it among the plates, together with the main course.
- Season with a little extra virgin olive oil.
- Decorate with basil leaves or another herb of your choice (optional).
