6 practical tips for buying, storing and using eggs wisely

Find out how to avoid misleading advertising and how to bring home the best options

Simple, practical and very versatile, eggs are an indispensable ingredient in practically every kitchen, both to quickly satisfy that hunger that has struck you at a certain point of the day, and to enrich a snack or to prepare bread, cakes and other desserts.

An object that performs so many functions deserves good care when purchasing it, which goes beyond a quick check of the box to see if any unit has a cracked shell. To make intelligent purchases, in fact, it is necessary to learn to identify the types of eggs – which are: conventional, cage-free, free-range, free-range and organic – and the sizes – small, large, extra and jumbo .

And contrary to popular belief, it’s not the color of the shell that reveals the type of egg purchased. Luis Barbieri, partner of the organic egg producer Raiar, explains: “Many people buy red eggs thinking that they come from free-range hens, but this is not always the case. Red hens lay red eggs, white hens lay white eggs and hens bastards lay eggs. of everything that is color”.

Another point that deserves attention is the color of the yolk, which indicates how the chicken was raised. Orange yolk, for example, normally comes from eggs produced by free-range chickens, which have a higher concentration of beta-carotene, vitamins A, D and E and omega 3. But be careful: feed with artificial colors can result in even in precious stones with intense colors and, therefore, cause the consumer to make fun of them.

So how can you avoid mistakes when choosing which one to take home? Whatever the purpose, eggs should be eaten fresh, so you need to look at the production date on the shell or packaging. If it exceeds 30 days it is old.

Knowing the manufacturers well is the key to not being fooled. Packaging that features the Organic Brazil and Certified Humane animal welfare seals are excellent options.
