Vatapd
ingredients
- 100 g of shrimp Dry
- 170 g of cashews
- 140 g of roasted and unpeeled peanuts
- 220 g of very fine cassava flour
- 400 g of peeled and chopped onion
- 1 teaspoon grated ginger
- 150 ml of palm oil
- 1/5 liter of coconut milk
- Salt to taste
Preparation method
In a blender, blend the shrimp, cashews and peanuts separately until crumbly. Repeat the same process with the onion until you get a paste. Reserve. Place the cassava flour, ginger, cashews, peanuts, shrimp and onion in a pan and mix until you obtain a smooth consistency. Season with salt, add the palm oil and stir to combine. Cook over medium heat and, little by little, add the coconut milk. Cook for 45 minutes, stirring constantly. Turn off the heat and serve immediately.
Tip: serve garnished with prawns and green olives.
Caruru
ingredients
- 600 g of ocher
- 1 onion peeled and chopped
- 1/4 cup cleaned shrimp
- 1 1/4 cups roasted cashews
- 1 cup shelled peanuts
- 1 1/2 cups water
- 1 tablespoon grated ginger
- 2 tablespoons of palm oil
- 1 tablespoon of apple cider vinegar
- Salt to taste
Preparation method
Place the okra in a container, cover with water, add the vinegar and leave to macerate for 15 minutes. Drain the water and dry. Using a knife, chop the vegetables and set them aside. Place the onion in the blender and blend it until you get a paste. Add the cashews, peanuts, prawns and ginger and beat again until smooth. Place the mixture in a pan, add the palm oil and heat over medium heat. Cook until the cream has a golden color. Add the okra and stir to combine. Turn off the heat, season with salt and serve immediately.

ingredients
- 250 g of hominids
- 1 liter of milk
- 395 g of condensed milk
- 2 cups roasted, skinless peanuts
- 250 g of milk cream
- Cinnamon stick to taste

Preparation method
Place the hominy in a container, cover them with water and leave them to soak for 24 hours. Then drain the water, transfer it to a pressure cooker, cover with water, cover and cook over medium heat for 20 minutes, after coming to pressure. Turn off the heat, wait for the pressure to release, open the pan and add the milk, condensed milk and cinnamon. Return to medium heat to cook for another 10 minutes. Turn off the heat and set aside. Place the peanuts in the blender and blend until crumbly. Transfer to the pan with the hominy, stir to combine, and serve immediately.

Tapioca couscous with coconut
ingredients
- 1kg of tapioca grainy
- 200ml coconut milk
- 200g grated coconut
- 1/4 l of hot milk
- 1 1/2 cups sugar
- 1 pinch of salt
- 395 g of condensed milk
- Grated coconut to decorate
Preparation method
Place the tapioca, sugar and salt in a container and mix. Add the hot milk little by little and mix to avoid lumps forming. Add the coconut milk and grated coconut and mix. Transfer to a round pan with a central bottom and place in the refrigerator for 20 minutes. Carefully remove from the mold, finish by decorating with condensed milk and grated coconut. Serve immediately.
Octopus rice
ingredients
- 1 cup of tea rice
- 1 cup of water
- 2 cloves of garlic, peeled and crushed
- 2 onions peeled and chopped
- 2 seeded and chopped tomatoes
- 2 kg of octopus cooked and cut into pieces
- 2/3 cup grated Parmesan cheese
- Salt, ground black pepper, paprika, coriander, chopped chives and olive oil to taste
Preparation method
In a pan, add the olive oil and place over medium heat to heat. Add the garlic and half the onions and sauté. Add the rice and mix. Cover with water, salt and cook until dry. Turn off the heat and set aside. In a clay pot, add the olive oil and paprika, stir and place over medium heat to heat. Add the rest of the onions, tomatoes, octopus and half the cilantro and chives and stir to combine. Arrange the rice on top of the mixture, add the cheese and the rest of the seasonings and mix. Turn off the heat and serve immediately.
