Oriental chard salad, typical of Japanese restaurants: easy and wonderful
A chard salad with oriental ingredients, reminiscent of those served in Japanese restaurants

Ingredients Oriental chard salad
– 1 medium sized chard, chopped
– salt to taste – just enough to dehydrate
– parsley to taste, chopped (or green onions)
– 1/2 carrot(s), peeled and grated
Oriental sauce ingredients:
– 2 dessert spoons of extra virgin olive oil
– 2 teaspoons of toasted sesame oil
– 2 dessert spoons of rice vinegar (or other vinegar of your choice)
– 2 tablespoons of soy sauce
– 1 teaspoon(s) of ground ginger ab
– pepper to taste
– salt to taste – if necessary (optional)
Ingredients TO DECORATE:
– toasted white sesame to taste
– black sesame to taste
PREPARATION:
- Start by putting the beets to dehydrate (see preparation).
- Set aside the other ingredients and utensils for the recipe.
- Wash and peel the carrot and grate it lengthwise with the rough part of the grater.
- Wash and dry the parsley or spring onion, chop them and set them aside on absorbent paper.
- Next, prepare the salad dressing.
PREPARATION:
Chard – Dehydrate (do this step during pre-prep):
- Wash the chard, dry it and cut it into thin strips.
- Place it in a colander over a bowl and distribute the salt over the entire surface of the chard.
- Mix well and let sit for about 30 minutes to dehydrate.
- Continue pre-preparation (step 2).
Oriental sauce:
- In a bowl, add the rice vinegar or another vinegar of your choice, the ground ginger and pepper and mix.
- Add the extra virgin olive oil, sesame oil and soy sauce and whisk to emulsify.
- Check the salt and add a little more if necessary.
- Reserve.
Oriental Chard Salad:
- Once the resting time has elapsed, wash the beets well under running water to remove excess salt.
- Dry with absorbent paper or with a vegetable spinner.
- Place it in a bowl, add the grated carrot and the chopped parsley or spring onion and mix.
- Drizzle with the sauce and mix again so that all the flavors blend together.
- Cover the bowl with cling film and place in the refrigerator for at least 1 hour before serving.
FINALIZATION AND ASSEMBLY:
- Remove the oriental chard salad from the fridge and arrange it on a serving plate or, if you prefer, distribute it among the plates.
- Finish with black sesame and toasted sesame.
