Mango ceviche

ingredients

  • two sleeves peeled and cut into cubes
  • 1 red onion, peeled and chopped
  • 1 bunch of chopped parsley
  • 1 bunch of chopped coriander
  • Juice of 4 lemons
  • 1 tablespoon chopped chilli
  • 1 red pepper, seeded and chopped
  • Salt to taste
  • 1 teaspoon grated fresh ginger

Preparation method

Place the mango, red onion, parsley, coriander, chilli, pepper and ginger in a container and mix. Next, drizzle in the lemon juice and stir to combine. Season with salt and serve immediately.

  • 1 green jackfruit
  • 3 cloves of garlic, peeled and chopped
  • 1/2 onion peeled and chopped
  • Juice of 1/2 lemon
  • 1 teaspoon of sugar
  • Salt, chopped green chilli and ground black pepper and olive oil to taste
  • 250 g of sauce of tomato
  • 1/4 cup chopped olives
  • 1/2 cup green corn tea
  • 1 red pepper, seeded and chopped
  • Greasing oil
  • Water for cooking

Preparation method

Under running water, wash the jackfruit. Then grease your hands with oil and cut the fruit into slices. Wash the slices well to remove all the milk they release. Then transfer the pieces to a pressure cooker, cover with water and cook over medium heat until the pressure rises. Cook for 15 minutes and turn off the heat. Wait for the pressure to release, open the pan, drain the water, wait for it to cool and chop the jackfruit, keeping the core and discarding the seeds.

In another pan, add the olive oil and heat over medium heat. Add the onion and garlic and brown them. Add the grated jackfruit, lemon juice, sugar, salt, black pepper and paprika and sauté for 7 minutes. Finally add the tomato sauce, olives, corn and green chillies and mix. Cook for another 5 minutes and turn off the heat. Serve immediately.

Chicken with pear sauce

ingredients

Chicken

  • 560 g of chicken fillet
  • 1 teaspoon of salt
  • 1/4 cup butter
  • 1/4 cup wheat flour

Sauce

  • 1 tablespoon of sugar
  • 2 tablespoons butter
  • 1/3 cup chopped mint leaves
  • 1 tablespoon lemon zest
  • 1/2 glass of dry white wine
  • 1/2 teaspoon salt
  • 2 pears sliced

Preparation method

Place the chicken fillets in a container and season with salt. Next, coat in the wheat flour and set aside. In a pan, add the butter and place over medium heat to melt. Arrange the fillets on top and brown them on both sides. Turn off the heat and set aside. In the same pan add all the sauce ingredients and cook over medium heat until the pears are soft. Turn off the heat, pour the mixture over the chicken and serve.

Preparation method

Grease a baking tray with oil and place the banana slices on top. Place in a preheated oven at 180°C for 10 minutes. Then turn the bananas and put them back in the oven for another 10 minutes.   • 2 apples, seeded and chopped
  • 1 red pepper, seeded and chopped
  • 1/2 cup white raisins
  • 1/2 red onion peeled and chopped
  • 1 clove of garlic, peeled and crushed
  • 1/2 chopped chilli pepper
  • 1 tablespoon grated ginger
  • 3/4 cup brown sugar
  • 1 lemon juice
  • 1 tablespoon butter
  • 1/2 teaspoon curry
  • Salt to taste

Preparation method

Place the apples in a container, sprinkle with lemon juice and mix. Reserve. In a pan, add the butter and place over medium heat to heat. Add the red onion, garlic, chilli and ginger and sauté for 3 minutes. Reduce the heat, add the apples, pineapple and pepper and cook for 5 minutes. Season with salt, curry and brown sugar and mix. Then add the raisins, cover the pan and cook for 30 minutes, stirring occasionally. Turn off the heat, wait for it to cool and then serve.

Farofa papaya

ingredients

  • 2 tablespoons of oil
  • 5 tablespoons of peeled and chopped onion
  • 2 cloves of garlic, peeled and crushed
  • 1 cup of tea papaya chopped
  • 150 g of fresh sausage
  • 1 cup cornmeal
  • 1 cup cassava flour
  • 1 teaspoon of salt

Preparation method

In a pan, add the oil and place over medium heat to heat. Add the onion and garlic and brown them. Add the sausage and brown it. Add the cornflour, cassava flour and salt and sauté until golden brown. Turn off the heat, place the papaya on top of the farofa and stir to combine. Serve immediately.
