Pineapple ice cream cake easy to prepare and very creamy

Simple pineapple cake

Time: 1h30 (+4h in the fridge)

Ingredients:

  • 5 eggs
  • 1 cup (tea) sugar
  • 1 cup margarine at room temperature
  • 2 cups (tea) of wheat flour
  • 1/2 cup (tea) potato starch
  • 1/2 cup (tea) pineapple juice concentrate
  • 1 tablespoon of yeast
  • Margarine and wheat flour for greasing and flouring

Cream:

  • 2 cups diced pineapple (tea)
  • 1/2 cup (tea) water
  • 2 tablespoons of sugar
  • 1 can of condensed milk
  • 1 tablespoon corn starch
  • 1 can milk (use empty condensed milk can to measure)

Preparation method:

  1. Using a mixer, beat the eggs and sugar for 10 minutes or until doubled in volume.
  2. Add the margarine and beat for 3 minutes.
  3. Add the sifted flour and starch, alternating them with the juice, beating until a homogeneous mixture is obtained.
  4. Mix the yeast with a spoon and pour it into a greased and floured 45cm x 35cm baking pan.
  5. Bake in a preheated medium oven for 35 minutes or until cooked through and golden brown.
  6. Leave to cool, turn out and cut in half.
  7. Meanwhile, for the cream, in a pan over low heat, cook the pineapple, water and sugar for 10 minutes.
  8. Drain and reserve.
  9. In a pan, heat the condensed milk and cornstarch dissolved in the milk over medium heat, stirring until it thickens.
  10. Turn off and then mix with the pineapple set aside.
  11. Fill the cake with half the cream, cover with the remaining dough and spread the remaining cream.
  12. Cut them into squares and wrap them in aluminum foil, one by one.
  13. Store in the refrigerator for 4 hours before serving.
