Ingredients: Spinach Pancake Dough

– 2 units of eggs

– 1 cup(s) milk, plus a little more for blending

– 2 teaspoons unsalted butter, melted.

– 170 g of wheat flour

– 2 teaspoon(s) of sugar

– 220 g of spinach leaves only (or frozen spinach)

– Salt to taste

– pepper to taste

– nutmeg to taste

– oil to taste – to grease the pan

PREPARATION:

  1. Separate the ingredients and utensils for the recipe.
  2. The recipe for 2 people yields 5 pancakes, in a 20cm diameter pan.
  3. Wash the spinach, leaves and stems well.

PREPARATION:

Spinach Pancake Dough – Dough Preparation:

  1. If using fresh spinach, place it on a cutting board and chop coarsely, also use the stems.
  2. In a blender or with a mixer, beat the milk, butter and eggs until smooth.
  3. Add the coarsely chopped or frozen spinach and blend again until you obtain a smooth mixture.
  4. Add the flour and sugar (helps set the color) and continue beating to combine.
  5. The consistency of the dough is denser due to the spinach, if necessary adjust with a little more milk to make it easier to spread: the dough must be thin, but not too thin because it could break during spreading.
  6. Season with salt, pepper and nutmeg and mix.

Spinach Pancake Dough – Pancake Preparation:

  1. Heat a non-stick pan.
  2. Put a drizzle of oil on a sheet of absorbent paper or use a brush and grease the pan.
  3. Place a portion of dough in the center of the pan: it should occupy at least ⅔ of the diameter.
  4. Rotate the pan to spread it over the entire surface.
  5. Let it cook over a very low heat until it comes away from the bottom.
  6. Turn gently with the help of a spatula or slotted spoon and cook on the other side too.
  7. Remove the pancake from the pan, place it on a plate and stack it as it is prepared.
  8. Repeat the operation until the dough is finished.

FINALIZATION AND ASSEMBLY:

  1. Things the spinach pancake(s). as you wish.
  2. Place the sauce in a refractory dish, arrange the pancakes on top at a certain distance and cover with more sauce and a little cheese, if it makes sense in your recipe.
  3. Return to oven to reheat/cook.
