A crispy polenta “fried” in the airfryer, which can be prepared with leftovers

Recipe for 2 people.

1 cutting board(s), 1 baking tray(s), 1 colander(s), 1 spatula(s), 1 grater (optional), 1 frying pan(es), 1 pastry brush(es) (or spray bottle), 1 wire whisk (optional)

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients TO SPRAY OR BRUSH (optional)

Ingredients for polenta:

– 3/4 cup(s) pre-cooked corn flour for polenta

– 650 ml water (or ready-made homemade vegetable broth)

– 1 small clove of peeled garlic (optional)

– 1/2 tablespoon(s) unsalted butter

– 1 tablespoon of grated parmesan

– . teaspoon(s) of salt

PREPARATION:

  1. Choose a pan suitable for your recipe. For 2 portions, use a baking dish measuring approximately 15cm x 22cm. Line the baking tray(s) with cling film and grease.
  2. If you have some ready-made polenta (leftovers), spread it on the lined and greased baking tray(s) – see the entire procedure for preparing the polenta (steps 7 to 9).
  3. For the polenta, use pre-cooked corn flour, as it greatly speeds up the preparation of the recipe, making it more practical. If you don’t have it, one option is to use corn flour and, alternatively, prepare it in a pressure cooker. see how Here.
  4. Separate the ingredients and utensils for the recipe.
  5. Peel the garlic and leave it whole.
  6. If you have not purchased the cheese already grated, grate the parmesan on the fine part of the grater.

PREPARATION:

Cooked cornmeal:

  1. Put the water in a pan, add the garlic clove and place on a high heat.
  2. When it boils, add a little salt.
  3. Slowly add the pre-cooked corn flour using a sieve, letting it fall into the water and stirring to avoid the formation of lumps.
  4. Cook, stirring, until it releases from the bottom of the pan and becomes very creamy – the cooking time depends on the flour/cornmeal you are using.
  5. Turn off the heat and add the butter and grated parmesan.
  6. Remove the garlic and check the salt.
  7. Spread the still hot polenta on baking trays lined with cling film and greased.
  8. Level it, leaving it with a thickness of approximately 2 – 2.5 cm.
  9. Cover with cling film and refrigerate for at least 1 hour or until solidified.

Fried Polenta in the Airfryer – cut:

  1. Preheat the Airfryer to 200°C.
  2. Remove the polenta from the refrigerator and turn it onto a cutting board.
  3. Remove the foil paper.
  4. First cut strips of about 1.5-2 cm.
  5. Cut the strips into sticks: For best use, measure the size of your Airfryer basket and cut the sticks to fit that size.

Fried Polenta in the Airfryer:

  1. Brush or drizzle the polenta sticks with a drizzle of oil, this will ensure that they create a crispier crust, also adding another layer of flavor to the preparation. However, this technique is not mandatory and, if you prefer, polenta can also be cooked without fat.
  2. Arrange the polenta sticks in the basket, without overlapping them and leaving space between them for air to circulate.
  3. Depending on the quantity and size of your equipment, place it in the Airfryer in stages.
  4. Place the basket in the drawer of the Airfryer preheated to 200ºC.
  5. Close the drawer and cook for about 20-25 minutes or until golden, without needing to turn.
  6. When they are golden and crispy, turn off the appliance and remove the drawer.

FINALIZATION AND ASSEMBLY:

  1. It is used for fried polenta in the airfryer as a snack or as an accompaniment to your main course.
