Delicious dried tomato pâté, with vegan cream cheese (without dairy products or derivatives), ready in just 15 minutes

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients Dried Tomato Patè (with vegan cream cheese)

– 1/2 cup(s) raw cashews (soaked for 8 hours)

– 1/3 cup(s) water (for whisking the cream sauce)

– 1 and 1/2 tablespoons of lemon (juice)

– 1/3 cup(s) unflavored coconut oil

– 1/4 teaspoon(s) of salt

– 1/4 teaspoon(s) of xanthan gum

– 1 tablespoon(s) of water (to dilute the xanthan gum)

– 2 units of preserved dried tomatoes, cut into small pieces + a few whole units for decoration

– 1 clove(s) of garlic, minced

PREPARATION:

1. Place raw cashews in a bowl. Cover with water and leave to macerate for 8 hours.

2. Separate the ingredients and utensils for the recipe.

3. Chop the dried tomatoes. Peel and mince the garlic clove.

4. Wash the lemon, dry it and squeeze the juice.

PREPARATION:

Sun-dried tomato pate (with vegan cream cheese):

1. Drain the water from the cashews using a strainer.

2. Place the soaked and drained chestnuts in the blender. Add water (see quantities in the ingredients), lemon juice, coconut oil and salt.

3. Beat until you obtain a very smooth cream.

4. Then dissolve the xanthan gum in a little water (see quantities in the ingredients).

5. Add to blender and blend some more until all ingredients are incorporated.

6. Add the garlic and chopped sun-dried tomatoes, blend until smooth.

FINALIZATION AND ASSEMBLY:

  1. Serve the dried tomato pate (with vegan cream cheese) as an accompaniment to appetizers, starters, sandwiches and also as a condiment on pasta.
  2. Decorate with dried tomatoes on top.
