Rice skin

Ingredients:
- 5 medium potatoes in their skins
- Salt and black pepper to taste
- 2 tablespoons butter
- 2/3 cup warm milk
- 2 cups cooked white rice
- 6 tablespoons grated parmesan
Filling:
- 2 tablespoons of oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 ripe tomatoes, peeled and seeded, diced
- Salt and black pepper to taste
- Basil leaves to taste
Preparation method:
- Cook the potatoes in boiling salted water for 20 minutes or until soft.
- Drain and hold with a peeling cloth.
- Pass while still hot in the citrus juicer.
- Mix butter, milk, salt and pepper.
- For the filling, heat a pan with oil over medium heat and fry the meat for 5 minutes.
- Add the onion, garlic and sauté for 3 minutes.
- Add the tomato, salt, pepper and basil and remove from the heat.
- Pour the rice into a medium ovenproof dish.
- Distribute the stew and cover with the puree.
- Sprinkle with parmesan and bake in a preheated medium oven for 20 minutes.
- Serve immediately.
