Oat and Linseed Bread Ingredients:
- 1 cup of warm milk (approx.)
- 1/2 cup (tea) of warm water
- 2 fresh brewer’s yeast tablets (30 g)
- 2 tablespoons of sugar
- 1 tablespoon of salt
- 5 tablespoons of oil
- 1 tablespoon of flax seeds
- 1 cup rolled oats (flakes)
- 2 cups of flour (wheat)
- 1 1/2 cups wholemeal flour
- Wheat flour for flour
- oil for greasing
- 1 yolk for brushing
Method of preparation:
In a bowl, mix the milk, water, yeast, sugar, salt and oil until completely dissolved. Add the flax seeds, oatmeal, wheat flour, and wholemeal flour and mix. Then transfer the dough to a floured surface and knead for 10 minutes, adding more milk if necessary, until it sticks to your hands. Cover and let stand for 40 minutes or until doubled in volume.
Divide the dough into 4 parts, shape the loaves and transfer them to the buttered molds. Brush with the egg yolk and let it rest for another 20 minutes. Bake in a preheated oven for 30 minutes or until lightly browned. Finally, remove from the oven, let it cool and serve, as desired, accompanying with ricotta.
