Capeletti Ingredients
– 500 g Capeletti with filling of your choice
Ingredients Broth (vegetable broth)
– 1 tablespoon(s) of olive oil
– 2 onions, cut in half
– 6 cloves garlic, halved
– 1 carrot(s), thinly sliced
– 2 celery stalks of about 10 cm, cut in half
– 1 leek(s), chopped (can be just the leaves)
– 2 sprigs of thyme
– 4 sprigs of basil
– 6 sprigs of parsley
– 4 bay leaves
– 10 units of black peppercorns w
– 3 L of boiling water
– Salt to taste
Ingredients To finish
– parsley to taste, chopped
PREPARATION:

Put a kettle with water on to boil (see quantities in ingredients).

Separate all the ingredients and utensils for the recipe.

Wash, peel and chop the onion and garlic.

Wash (no need to peel) and cut the carrot into thin slices.

Wash the celery and leek and cut them into large pieces.

Wash the sprigs of thyme, basil and parsley and the bay leaves.

Then, while the broth is cooking, wash, dry and chop the finishing parsley. Reserve it on a paper towel.
PREPARATION:
Vegetable broth:
- Place the vegetables (onion, garlic, carrot, celery and leek) in a pan.
- Drizzle with olive oil and mix well.
- Turn on the heat to high and brown for 2 minutes, do not let it color.
- Add the herbs (thyme, basil, parsley and bay leaves).
- Add the peppercorns and add a little salt (don’t add too much, let him adjust the salt at the end).
- Pour boiling water over them and cook in a covered pan over medium heat for about 30 minutes or until the vegetables are very soft.
- Turn off the fire.
- Strain the broth through a fine mesh strainer (if you prefer, cover the strainer with a damp cloth so that only the liquid passes through). Mash lightly with a wooden spoon or slotted spoon to enjoy the full flavor of the vegetables and seasonings.
Capeletti in Broth:
- Put the broth back into the pan, turn on the heat and when it starts to boil again, taste and adjust the salt.
- Immerse the capeletti in the broth and cook according to the instructions on the package.
FINALIZATION AND ASSEMBLY:
- Serve the Capeletti in Broth in a soup bowl or, if you prefer, distribute it on deep plates or individual bowls.
- Garnish with chopped parsley.
