Pasta with cauliflower sauce

ingredients

  • 500 g of spaghetti spaghetti type
  • 1 cauliflower florets
  • 1 onion peeled and chopped
  • 5 liters of water
  • 2 cups of milk tea
  • Salt, olive oil and ground black pepper to taste

Preparation method

In a skillet, add the olive oil and place over medium heat to heat. Add the onion and cauliflower and sauté until lightly browned. Turn off the heat, set aside a portion and place the rest in a blender. Add the milk, salt and black pepper and blend until smooth. Return to medium heat and cook for 10 minutes.

In a pan add water and salt and bring to a boil over medium heat. Add the pasta and cook until al dente. Turn off the heat, drain the water and transfer the pasta to a baking dish. Cover with the cauliflower sauce and serve immediately.

Tip: serve garnished with basil leaves.

Cauliflower risotto

ingredients

  • 1 cauliflower florets, cooked and chopped
  • 1 piece of pumpkin Peeled, cooked and crushed Cabotiá
  • 1/2 glass of dry white wine
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion peeled and chopped
  • 1/2 cup grated parmesan cheese
  • 300ml hot chicken stock
  • Salt and ground black pepper to taste

Preparation method

In a skillet, add half of the butter and olive oil and place over medium heat to heat. Add the onion and sauté. Add the cauliflower florets and sauté until they begin to sizzle. Add the white wine and chicken stock and cook for 5 minutes. Add the squash and season with salt and pepper. Cover the skillet and cook for another 20 minutes. Turn off the heat, add the remaining butter and cheese over the risotto and stir. Serve immediately.

Creamy Cauliflower Cake

ingredients

  • 1 cooked cauliflower florets
  • two egg
  • 1 cup ground beef
  • 1 onion peeled and chopped
  • 1 cup of curd tea
  • 3 tablespoons of wheat flour
  • 1 tablespoon baking powder
  • Salt and ground black pepper to taste
  • Butter for greasing
  • Wheat flour for flouring

Preparation method

Place the cauliflower florets in a blender and blend until crumbly. Transfer to a container, add the rest of the ingredients, except the baking powder, and mix until smooth. Add the baking powder and mix to combine. Then place the dough on a baking sheet greased with butter and floured with wheat flour. Place in a preheated oven at 180ºC for 45 minutes. Serve immediately.



Kibbeh with cauliflower

Kibbeh with cauliflower

ingredients

  • 1 cauliflower florets
  • 600 g of minced meat
  • 1 onion peeled and chopped
  • 2 cloves garlic, peeled and crushed
  • Salt, ground white pepper, chopped mint leaves and olive oil to taste
  • Water for cooking

Preparation method

Place the cauliflower florets in a pan, cover with water and cook over medium heat until tender. Turn off the heat, drain the water, wait for it to cool and transfer it to a blender. Blend until smooth. Place the vegetables in a container, add the rest of the ingredients and mix until you get a consistent mixture.

Then, with a spoon, take a little dough and shape it into a kibbeh. Repeat with all the dough and place it on a baking sheet greased with olive oil. Bake in a preheated oven at 200ºC until golden brown. Serve immediately.

Chicken with cauliflower

ingredients

  • 1 chicken breast cut into fillets
  • 1 cauliflower florets, cooked and chopped
  • 1 onion peeled and chopped
  • 2 cloves garlic, peeled and crushed
  • 1 tomato chopped and seedless
  • 2 tablespoons of ricotta cream
  • Salt, ground black pepper and olive oil to taste

Preparation method

In a bowl, place the chicken and season with salt and black pepper. Reserve. In a skillet, add the olive oil and place over medium heat to heat. Add the onion and garlic and sauté. Add the chicken and tomato and sauté until golden brown. Turn off the heat and set aside. In a bowl, place the creamed cauliflower and ricotta and stir to combine. Pour the mixture over the chicken and serve immediately.
