PREPARATION:

  1. This recipe yields 4 waffles for every 2 servings.

PREPARATION:

Banana and oat waffles (dough preparation):

  1. In a deep dish or bowl, break the eggs, add the yeast and beat well.
  2. In another shallow dish or bowl, mash the banana well with a fork until no large pieces remain.
  3. Mix the mashed banana and beaten eggs until well incorporated.
  4. Add the oat flakes and cinnamon powder (optional) and mix well.

Banana and oat waffles (cooking):

  1. Heat a waffle maker, if using a pan, over medium heat.
  2. Grease with oil and place a portion of dough (1 almost full ladle) for each wafer and spread.
  3. Close and cook for about 5 minutes (in the machine) or 2-3 minutes (in a pan, turn it over and let it cook for another 2-3 minutes so that it can brown on the other side too).
  4. Remove when golden on both sides.
  5. Repeat the operation with the rest of the dough.
  6. Remember to re-grease if necessary.
  7. Place on a rack or auxiliary plate.

Banana Oatmeal Waffles (refrigerate or freeze):

  1. Once ready, wait for it to cool before freezing it or storing it in the refrigerator.
  2. Refrigerate in a sealed container for up to 5 days.
  3. If you choose to freeze them, separate them and put them in the freezer. Once frozen, transfer them to another container of your choice.

FINALIZATION AND ASSEMBLY:

  1. Serve the Banana and oat waffles hot with your favorite accompaniments.
  2. The wafer can be defrosted and reheated in the microwave for a few seconds.
