  • 1 tablespoon olive oil
  • 1 onion peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 1 courgette cut into cubes
  • 2 cups of spinach tea
  • 1 cup chopped broccoli florets
  • 4 cups homemade vegetable broth
  • 1 lemon juice
  • Salt, ground black pepper, chopped parsley and coriander to taste

Preparation method

In a pan, arrange the oil and place over medium heat to heat. Add the onion and garlic and sauté until golden brown. Add the zucchini, spinach and broccoli and sauté until wilted. Add the vegetable stock and cook until boiling. Reduce the heat and simmer for about 15 minutes. Turn off the heat, wait for it to cool and transfer the soup to a blender. Blend until smooth and return to the pan. Season with lemon juice, parsley, cilantro, salt and black pepper and place over medium heat to heat. Serve immediately.

Beetroot soup with sweet potatoes

  • 3 beets, peeled and diced
  • 1 sweet potato peel and cut into cubes
  • 1 onion peeled and chopped
  • 6 cabbage leaves
  • 1 lemon juice
  • 1 tablespoon olive oil
  • Salt and ground black pepper to taste

Preparation method

Place the beets, sweet potatoes, onion and salt in a pressure cooker and cover with water. Place over medium heat to cook for 5 minutes after starting the pressure. Turn off the heat.   • 1 tablespoon apple cider vinegar

  • 2 liters of homemade vegetable broth
  • Salt and ground black pepper to taste

Preparation method

In a pan, add the coconut oil and place over medium heat to heat. Add the onion, garlic and ginger and sauté. Add the kale, green apples, potatoes, apple cider vinegar and lemon juice and cook until boiling. Add the vegetable stock, salt and black pepper and cook for 20 minutes. Turn off the heat, wait for it to cool and transfer the soup to a blender. Blend until smooth and return to the pan. Place over medium heat to heat and serve.

Preparation method

In a skillet, add the olive oil and place over medium heat to heat. Add the onion, garlic, and ginger and sauté. Add the squash and vegetable stock and cook until the squash is soft. Turn off the heat, wait for it to cool, and transfer the soup to a blender. Blend until smooth and return to the skillet.   • two carrots peel and cut into slices
  • 2 celery stalks, chopped
  • 1 courgette, peeled and diced
  • 4 cups homemade vegetable broth
  • 1 tablespoon olive oil
  • 1 lemon juice
  • Salt and ground black pepper to taste

Preparation method

In a skillet, add the olive oil and place over medium heat to heat. Add the onion and garlic and sauté. Add the carrots, celery and zucchini and sauté for 5 minutes. Add the vegetable stock and cook until boiling. Reduce the heat and simmer for another 20 minutes. Turn off the heat, wait for it to cool and transfer the soup to a blender. Blend until smooth and return to the skillet. Season with lemon juice, salt and black pepper and place over medium heat to reheat. Serve immediately.
