A delicious recipe for a creamy corn cake, without wheat and without lactose, perfect for any occasion.

Ingredients CREAMY CORN CAKE (LACTOSE FREE)
– 1 cup(s) fresh green corn, shelled (or 1 ear per 2 servings)
– 4 units of eggs
– 2 tablespoons of lactose-free butter + a little for greasing
– 2 cups of sugar
– 4 cup(s) of lactose-free whole milk
– 1 1/3 cups cornmeal + a little for dusting
– 4 tablespoons cornstarch
– 3 teaspoons of baking powder THE
– 100 g of lactose-free parmesan cheese
PREPARATION:
- Separate the recipe ingredients and utensils.
- If you don’t have the lactose-free products suggested in the recipe, replace them with conventional ingredients.
- Preheat the oven to 180°C.
- Butter and flour a 20×30 cm rectangular baking pan for 4 portions.
- Clean the corn cobs and cut the kernels with a sharp knife.
- Grate the Parmesan cheese finely if not already grated.
PREPARATION:
CREAMY CORN CAKE (LACTOSE FREE):
- Place the corn kernels, eggs, lactose-free butter, sugar, lactose-free milk, and cornstarch in a blender. Blend until smooth.
- Add the corn flour, the yeast and beat for a few seconds, just enough to incorporate.
- Then add the grated parmesan, mix well with a spatula or a blender.
- Transfer the mixture to the prepared pan and bake for 50 minutes in a preheated oven at 180°C until the cake is golden, firm on top and moist on the inside: the toothpick should come out a little dirty.
- Once it has reached the desired cooking, turn off the oven and remove the cake from the pan.
- Remove from the oven and leave to cool a little.
FINALIZATION AND ASSEMBLY:
- Serve the creamy corn cake (lactose-free) in squares.
- Store at room temperature for up to 2 days, then transfer to the refrigerator.
