Enjoy our creamy watercress soup, without cream, served on Italian bread. Perfect for cold days
A light, vegan soup with the predominant flavour of watercress and a crispy pastry served on Italian bread.

Ingredients Homemade vegetable, watercress and carrot broth
– 1/2 onion(s), peeled and roughly chopped
– 1 clove(s) of garlic, crushed without the peel
– 2 celery stalks, about 7cm each, roughly chopped
– 1/4 carrot(s), peeled and roughly chopped
– 3 cups watercress (leaves, no stems)
– 1 unit(s) of laurel
– 4 black peppercorns, crushed THE
– 2 sprigs of thyme
-750 ml of water
– Salt to taste
Ingredients for the shortcrust pastry croutons (optional)
– 1/4 cup(s) wheat flour (optional)
– 1 1/2 tablespoons water (optional)
– 1 teaspoon(s) of cachaça (optional)
– 1 teaspoon of oil for the pasta + the necessary quantity for frying (optional)
– Salt to taste
– pepper to taste
Ingredients Vegan watercress soup
– 2 tablespoons of olive oil
– 1 unit of onion, chopped
– 3 cup(s) of homemade vegetable, watercress and carrot broth (see recipe)
– Round bread as desired (crumbs only – ½ cup per person)
– 60 ml of rice cream
– 100 ml of vegetable milk
– Salt to taste
– pepper to taste
Ingredients to finish
– watercress to taste (leaves)
– extra virgin olive oil as needed (a drizzle)
Ingredients to accompany
– 2 single round loaves of Italian bread (without the crumbs, which will be used to prepare the soup)
PREPARATION:
1. Start preparing the homemade vegetable, watercress and carrot broth (see preparation).
2. Separate other ingredients and utensils from the recipe.
3. Chop the onion to prepare the soup.
4. Cut the top of the Italian bread like a lid (open it well, because the soup will be served inside). Reserve the tops of the bread to serve as shown in the photo.
5. Remove all the crumbs from the bread and reserve 1/2 cup (tea) per person to prepare the soup. The rest of the crumb can be saved, for example, to toast and make breadcrumbs.
6. Preheat the oven to 160°C to warm the bread.
PREPARATION:
Homemade vegetable, watercress and carrot broth (do this step before starting the pre-preparation):
1. Peel and crush the garlic clove. Peel the onion and carrot and chop them coarsely. Wash the celery and chop it.
2. Wash the watercress well, remove the stems, separate some leaves for finishing and store them on absorbent paper.
3. Put all the broth ingredients in a pot and add the water (see quantity in ingredients). Bring to a boil and cook for at least 15 minutes.
4. Continue pre-preparation.
ENTRY OR SWEET
If you have chosen to prepare an appetizer or dessert, take the opportunity to prepare it once the preparation is finished and while the broth is cooking.
Homemade vegetable, watercress and carrot broth:
1. Once the estimated cooking time of the broth has elapsed, turn off the heat.
2. Remove the bay leaf and thyme sprigs. Strain the broth, separate the solids in a colander and let it cool for about 5-10 minutes.
3. Meanwhile, prepare the vegan shortcrust pastry croutons (optional).
Pastry croutons (optional):
1. In a food processor, mix all the dough ingredients.
2. Cover the work surface with cling film, grease it with oil and, using a rolling pin, roll out the dough very thinly.
3. Trim the edges so they are straight. Using a 2 x 2 inch square cutter, cut out the dough. Then cut the squares in half diagonally to make triangles (you should make about 10 cookies per person). Cover with a clean, damp cloth.
4. Over low heat, heat a pan with enough oil to fry the shortcrust pastry croutons.
Italian bread:
1. Turn off the oven.
2. Place the Italian bread on a baking tray and heat it in the turned off oven.
3. Meanwhile, continue preparing the soup.
Vegan watercress and potato soup:
1. Measure the amount of broth needed. Place in the blender.
2. Transfer the remaining ingredients in the sieve to the blender.
3. Add the reserved breadcrumbs (½ cup per person).
4. Whisk until well mixed and very green. Reserve.
5. In the pan where you prepared the broth, heat the oil and brown the chopped onion over medium heat.
6. Add the blended soup and heat.
7. Add the vegetable milk and rice cream to make it creamy.
8. If necessary, adjust the consistency with more broth or filtered water.
9. Leave it on the heat for another 2 minutes, or long enough for it to heat up.
Pastry croutons (optional):
1. Fry the pasta triangles (crostini) in the pan with hot oil. Test, put one in first, if it doesn’t bubble it’s not hot, wait. If it turns out too dark, turn off the heat to let it cool a bit.
2. Remove them from the pan when they are golden.
3. Let it dry on a plate lined with absorbent paper.
4. While still warm, season with salt, pepper or other seasoning of your choice.
FINALIZATION AND ASSEMBLY:
1. Remove the loaves from the oven and arrange them on individual plates.
2. Serve the soup inside the buns.
3. Complete the soup with watercress leaves and a drizzle of extra virgin olive oil.
4. Serve with slices of bread and shortcrust pastry croutons (optional).
