Ricotta and Spinach Stuffed Bread

Ingredients:

  • 1 tablet of fresh organic yeast (15g)
  • 1 cup of warm milk
  • 1 tablespoon sugar
  • 1 tablespoon oil
  • 1 cup and 1/2 cup (tea) wheat flour
  • 1 cup and 1/2 cup (tea) whole wheat flour
  • Oil for anointing
  • 1 egg yolk for brushing

Filling

  • 2 cups crumbled ricotta
  • 1 cup cooked spinach, drained and chopped
  • 1 tablespoon powdered vegetable seasoning

Preparation method:

  1. In a bowl, mix the yeast, warm milk, sugar and oil.
  2. Add the flour and knead until a soft dough forms.
  3. Cover and let rest for 1 hour.
  4. In another bowl, mix the filling ingredients.
  5. Divide the dough into 10 parts, roll it out with a rolling pin, spread the filling, roll them up like roulades and transfer them to greased baking trays.
  6. Brush with egg yolk and let rest for another 40 minutes.
  7. Bake in a preheated medium oven for 35 minutes or until golden brown. Serve.
