Starred chef Alex Atala reveals his omelette recipe; Learn


With just a few ingredients you can prepare this dish for breakfast or even lunch.




Renowned chef Alex Atala, who runs the Michelin-starred DOM, taught his recipe for frittata, a cheap, simple and easy-to-please dish.

The ingredients couldn’t be more basic: eggs, salt, butter, and toast.

“In Italy they believe that a good chef must know how to make good spaghetti with garlic and oil because simplicity does not allow for mistakes. Making good spaghetti with garlic and oil requires wisdom, a human integration with the ingredient to seek perfection. In France, frittata”, Atala began in a video published on his YouTube channel.

The chef said that when he was young and backpacking, he went to live in Belgium and decided he didn’t want to go back to Brazil. He worked as a house painter and, to get a visa, took a summer cooking class. At the time, he had to complete three mandatory internships. In one of them, he had the mission of making 1,200 omelettes in one day.

“I have made many omelettes in my life. But I think I still know how to make them, I will share the classic way of making a French omelette,” she added.

Alex Atala also explained that many people like to use milk in the recipe: “I’m not against it, but when you add milk, it makes the dough more liquid and it takes a little longer to cook and it breaks more easily, it breaks. It loses elasticity,” he explains.

Ingredients:

– 4 fresh eggs

– 1 pinch of salt

– 1 tablespoon butter

– 1 slice of toasted bread

Preparation method:

1 – Add salt to the eggs and beat well until you get a smooth mixture

2 – Heat the pan over low heat

3 – Add a generous amount of butter to the pan

4 – With the butter melted, remove the pan from the oven and add the egg mixture and set aside for a minute

5 – Stir the mixture with a silicone spatula and put it back on low heat to let the egg cook slowly until it thickens.

6 – When it is nice and creamy, remove from the heat and detach the bottom of the omelette a little from the pan and add the butter to make it slide better.

7 – Then turn it very carefully over to the other side, so as to form a “cushion” with the spatula and put it back on the heat.

8- When it is melted and creamy, yellow and without burns on the outside, turn off the heat, add it to the slice of toasted bread and enjoy!
