Cream of potatoes with peppers
Time: 1 hour

Ingredients:
- 1 chopped onion
- 1 clove of garlic
- 2 chicken broth cubes
- 1.5 litres of water
- 2 slices of Calabrian sausage, sliced
- Salt and chopped green chili pepper to taste
- 1 cup grated mozzarella
Preparation method:
- In a pan, place the potato, onion, garlic, bay leaf, broth and water.
- Place over medium heat and cook until the potatoes fall apart.
- Let it cool, remove the bay leaf, blend everything in the mixer, including the cooking water and set aside.
- Meanwhile, in a pan over medium heat, brown the sausage in its own fat until golden.
- Pour in the beaten potato and let it cook for 3 minutes after boiling.
- Turn off and adjust the salt, if necessary.
- Sprinkle with mozzarella and green peppers and serve immediately.
