TRADITIONAL PUMPKIN PIECE SWEET Ingredients:
– 800 g dried pumpkin, neck cut into cubes
– 400 g sugar (or 60% of the weight of the pumpkin, depending on your sweetness preference)
– 2/3 tablespoon(s) of quicklime
– 400 ml of water, to prepare the syrup
– 2 pieces of cinnamon sticks ABC
– 8 cloves THE
PREPARATION:
- Separate the utensils and ingredients for the recipe. Choose a large pan, with room to mix the candies.
- Quicklime is essential for the candy to have a crust on the outside and be soft on the inside. Buy this ingredient online.
- Sterilize a glass jar and its lid to store candy:
- Place the pot and lid in a large saucepan, cover with water and bring to the boil.
- Let it boil for 10 minutes.
- Remove it carefully using tongs or kitchen tongs and place it on a clean tea towel, leaving it to dry naturally.
- Peel and cut the pumpkin into 2cm x 2cm cubes.
- Place the pumpkin cubes in a large bowl and add enough water to cover them.
- Add the quicklime and mix well. Cover and let the pumpkin soak for 2 or 3 hours so that the skin forms on the cubes.
PREPARATION:
Traditional pumpkin jam:
- Once the soaking time is up, drain the water and rinse the pumpkin cubes well under running water, using a colander.
- Rinse each cube under running water and prick it with a fork on one or both sides to allow the syrup to penetrate during cooking.
- In a large pan add the water, sugar, cinnamon and cloves. Place on the stove and boil until the syrup boils.
- Add the pumpkin cubes to the pan and cook over low heat, with the pan covered. Stir occasionally, being careful not to break the cubes. Tip: To prevent the cubes from breaking, gently push the pumpkin with the spatula while stirring.
- Cook for about 1 hour, until the cubes are soft and the syrup has reduced to the point where it drips quickly (one point after the thread point). If necessary, add small amounts of water during cooking to prevent the syrup from thickening too much.
- Once cooked, turn off the heat and let the sweets rest in the pan until completely cooled.
FINALIZATION AND ASSEMBLY:
- Once cold, transfer the piece of pumpkin jam in the sterilized glass jar and close hermetically.
- Store in the refrigerator and serve cold or at room temperature.
