Rice cake stuffed with cheddar

Ingredients:

  • 2 cups cold cooked rice
  • 1/2 cup (tea) water
  • 1 tablespoon crushed garlic
  • 3 tablespoons chopped parsley
  • 1/2 cup chopped green olives
  • 1/2 cup grated parmesan cheese
  • 2 eggs
  • 1 egg yolk
  • 1/2 cup (tea) wheat flour
  • 2 cups cubed cheddar cheese
  • Oil for frying

Preparation method:

  1. In the blender, blend half of the rice with the water.
  2. In a bowl, mix the beaten rice with the remaining rice, garlic, parsley, salt, olives and parmesan.
  3. Add the eggs and egg yolks, lightly beaten with a fork, and add the flour little by little.
  4. Knead well with your hands.
  5. Shape the ravioli with the dough and insert a cube of cheddar cheese into each ravioli.
  6. Press and shape again and fry in hot oil.
  7. Drain on absorbent paper and serve immediately.
