In an announcement on social media, the chef explained the reasons for the decision; he marked an era by going beyond the classics and offering exclusive burgers
After twelve years in business, Meats will close. According to an announcement on social media this Thursday (15), the burger restaurant run by chef Paulo Yoller will serve its last sandwich on September 1st.
The decision to close the business, according to Yoller, is due to the increase in rent for the corner space he has occupied since 2012 on Rua dos Pinheiros. “We tried to negotiate, but the time has come when it is no longer possible. It has become unsustainable,” explains the Meats chef.
Opened in 2012, the burger restaurant marked an era in São Paulo’s food scene. Starting with the location: a corner of Rua dos Pinheiros that, until then, was far from being the food corridor it is today. Meats was also known for going beyond classics like x-salada – founded by some chains inspired by North American diners of the 1950s – and offering original versions of the sandwich.
This is the case of the hoolingan (180g hamburger, cheddar cheese, pickled cucumbers, bacon and hoolingan mayonnaise, with horseradish, Korean wasabi and karashi, on cassava brioche, R$49) and the zucchini (180g hamburger, Fazenda Atalaia boursin cheese, grilled zucchini, mint coulis and bacon, on cassava brioche, R$47), which remain on the menu to this day.
Back then, there was little talk of blended cuts of meat for burgers, unusual bun combinations, and – above all – the quality of the raw material. Yoller helped pave that market, along with names that preceded him, such as Luiz Cintra, who ran the famous St. Louis Classic Burgers for seventeen years – he sold the brand last year. “I think we made history and that we greatly influenced the burger restaurants that came after. And that makes me happy,” says the Meats chef.
However, this is not the end of Yoller’s journey in gastronomy. “We are making plans for our future. But for now it’s about taking this difficult step to be able to fly later,” he says, promising news soon. Control.
