Leek and olive quiche

Ingredients:

  • 2 tablespoons margarine
  • 1 egg
  • 1 teaspoon salt
  • 1/2 cup (tea) cold water
  • 2 cups wheat flour (approximately)

Filling

  • 2 beaten eggs
  • 50 g grated parmesan cheese
  • 1 cup grated mozzarella
  • 1 cup chopped green olives
  • 2 leek stalks, thinly sliced

Preparation method:

  1. In a blender, beat the margarine, egg, salt and water.
  2. Transfer to a bowl and add the flour, a little at a time, mixing until it no longer sticks to your hands. Add more flour if necessary.
  3. Line the bottom and sides of a 26cm diameter springform pan, pressing with your hands. Book.
  4. For the filling, in a blender, beat the eggs, cream and half of the parmesan.
  5. Add the mozzarella and mix with a spoon.
  6. Spread this cream on the dough, distribute the olives and leeks on top.
  7. Sprinkle with the remaining Parmesan and bake in a preheated medium oven for 30 minutes or until golden brown.
