Stuffed Spinach Gnocchi

Ingredients:

  • 4 tablespoons of oil
  • 1 grated onion
  • 1 cup (tea) of water
  • 1 cup of milk (tea)
  • Salt and black pepper to taste
  • 2 cups (tea) of wheat flour
  • 30 cubes of mozzarella
  • Ice water and breadcrumbs for coating
  • Oil for frying

Preparation method

  1. Heat a pan with oil over medium heat and sauté the onion and spinach for 5 minutes.
  2. Add water, milk, salt, pepper and bring to the boil.
  3. Add the flour all at once, stirring vigorously until it comes away from the bottom of the pan.
  4. Remove from heat and then let cool.
  5. Open a small portion of dough in the palm of your hand, place a cube of cheese on top and close to form a ball.
  6. Pass them through iced water, in breadcrumbs and fry them, a few at a time, in very hot oil until golden brown.
  7. Drain on absorbent paper and serve immediately.
