Roast Chicken Puff Pastry: Healthier, Easier, and Drier

Roast Chicken Puff Pastry

Time: 1h30 (+30min in the fridge)

Ingredients:

  • 6 cups (tea) of wheat flour
  • 1 tablespoon salt
  • 1 can of cream
  • 1/2 cup cold butter, cubed
  • About 4 tablespoons of ice water
  • Sesame seeds for dusting

Filling

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cups cooked, shredded chicken
  • 1 can of corn (with water)
  • 4 tablespoons chopped green olives
  • 2 ripe tomatoes, peeled and seeded, diced
  • 1 tablespoon wheat flour
  • Salt, black pepper and chopped green chili pepper to taste
  • 1 cup (tea) of Catupiry® type cream cheese

Preparation method:

  1. In a bowl, sift the flour with the salt.
  2. Add the cream and butter and work with your fingertips until you obtain a crumb-like consistency.
  3. Add the ice water, little by little, stirring until it ignites.
  4. Wrap in cling film and refrigerate for 30 minutes.
  5. For the filling, melt the butter in a pan over medium heat and sauté the onion for 3 minutes.
  6. Add the chicken, corn with water, olives and tomatoes and sauté for 5 minutes.
  7. Sprinkle in the flour, stirring until it thickens.
  8. Remove from heat and season with salt, pepper and green perfume. Let it cool.
  9. Roll out the dough with a rolling pin between two sheets of plastic wrap on a smooth surface until it is 3mm thick.
  10. Cut into 7cm diameter discs.
  11. Add a piece of ricotta, a portion of the stew and close well by pressing the edge with a fork.
  12. Transfer to a baking sheet, brush with egg and sprinkle with sesame seeds.
  13. Bake in a preheated medium oven for 20 minutes or until golden brown.
  14. Transfer to a plate and serve.
