Banana Peel Cake
Ingredients
- 4 peels of bananathe well washed ripe ones
- 3 eggs
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon (optional)
Preparation method
In a blender, beat the banana peels with the eggs, sugar and oil until smooth. In a bowl, mix the flour and yeast. Add the contents of the blender and mix until you get a uniform mass. Pour the mixture into a greased and floured pan and bake in a preheated oven at 180°C for about 35 minutes. Serve then.
Pumpkin Peel Crumble
Ingredients
- Peel of 1 pumpkin, well washed and mashed
- 1 chopped onion
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup cassava flour
- Salt and ground black pepper to taste
Preparation method
In a pan, brown the garlic and onion in olive oil until golden. Add the peels pumpkin and sauté for another 5 minutes, stirring well. Gradually add the cassava flour and continue stirring. Season with salt and black pepper and serve immediately.

Preparation method

Ingredients
- Peel of 1/2 watermelon
- 2 teacups of sugar
- 1/2 cup water
- 2 cloves
- 1 cinnamon stick
Preparation method
Remove the green part of the peel watermelon and cut the white part into cubes. In a pan, place the cubes, sugar, water, cloves and cinnamon. Cook over low heat, stirring occasionally, until the watermelon cubes are soft and the liquid turns into a thick syrup. Let it cool and then serve.

- Well washed shells of 3 chayotes
- 1 large potato, peeled and chopped
- 1 chopped onion

- 1 litre of vegetable broth

In a pan, brown the garlic and onion in olive oil until golden. Add the peels chayote and the potato and sauté for another 3 minutes. Add the vegetable stock and cook until the ingredients are soft. Remove from heat and blend in a blender until you get a creamy soup. Season with salt and black pepper and serve immediately.
