Cashew Cake
Time: 1h (+4h in the fridge)

Ingredients:
- 1 1/2 pack of chocolate flavoured corn starch biscuits (300g)
- 1/2 cup melted margarine
- 1/3 cup roasted and ground shelled peanuts
- Roasted peanuts for garnish
Filling
- 2 cans of condensed milk
- 1 tablespoon unsalted margarine
- 1 cup roasted and ground peanuts
- 1 can of whey-free ice cream
Preparation method:
- Grind the biscuit in a blender and transfer it to a bowl.
- Add the margarine, peanuts and work with your fingertips until you get a crumb-like consistency.
- Line the bottom and sides of a 9.5 inch (24 cm) springform pan and bake in a preheated medium oven for 12 minutes or until set. Leave to cool.
- In a skillet, heat the condensed milk, margarine and peanuts over medium heat, stirring constantly, until thickened.
- Mix the cream and let it cool.
- Spread over the dough and place in the refrigerator for 4 hours.
- Unmold, decorate with peanuts and serve.
