Cashew Cake

Time: 1h (+4h in the fridge)

Performance: 10 servings

Difficulty: easy

Ingredients:

  • 1 1/2 pack of chocolate flavoured corn starch biscuits (300g)
  • 1/2 cup melted margarine
  • 1/3 cup roasted and ground shelled peanuts
  • Roasted peanuts for garnish

Filling

  • 2 cans of condensed milk
  • 1 tablespoon unsalted margarine
  • 1 cup roasted and ground peanuts
  • 1 can of whey-free ice cream

Preparation method:

  1. Grind the biscuit in a blender and transfer it to a bowl.
  2. Add the margarine, peanuts and work with your fingertips until you get a crumb-like consistency.
  3. Line the bottom and sides of a 9.5 inch (24 cm) springform pan and bake in a preheated medium oven for 12 minutes or until set. Leave to cool.
  4. In a skillet, heat the condensed milk, margarine and peanuts over medium heat, stirring constantly, until thickened.
  5. Mix the cream and let it cool.
  6. Spread over the dough and place in the refrigerator for 4 hours.
  7. Unmold, decorate with peanuts and serve.
