Gluten/Wheat Free Banana Cuca: Easy, Creamy Inside, Crispy Outside
A delicious and practical gluten/wheat free banana cake with rice flour dough and creamy filling without pre-cooking

Gluten/wheat free banana bread ingredients – Dough:
– 125 g unsalted butter at room temperature
– 200 g of sugar
– 1 unit of beaten egg
– 240 g rice flour (1/4 cup = 50 g)
– 50 g of corn starch
– 10 g of baking powder THE
– 1/2 teaspoon xanthan gum (optional)
– cinnamon powder to taste THE
– 2 tablespoons of milk + a little, if necessary, to adjust the humidity of the dough (optional)
Practical and Creamy Filling Ingredients::
– 1 can/cans of condensed milk
– 2 units of eggs – only the yolk(s)
– 1 teaspoon(s) of vanilla essence
– lemon to taste (drops)
– 5 bananas, or enough
Ingredients FOR OILING:
– oil to taste
Ingredients TO SERVE:
– cinnamon powder to taste (optional)
THE
PREPARATION:
- For a full recipe (4 servings), grease a 22cm diameter round cake tin with a removable base.
- Remove the butter from the refrigerator, divide it into portions and cut it into cubes.
- Slice the ripe bananas and sprinkle them with drops of lemon juice to prevent them from browning.
- Separate all ingredients and other utensils to make the process easier.
- Preheat the oven to 180°C.
PREPARATION:
Gluten/wheat free banana bread – Dough:
- In a bowl, place the butter at room temperature.
- Then add the other dough ingredients (sugar, eggs, rice flour, corn starch, baking powder and cinnamon powder.
- Using your hands, crumble the dough, forming a moist crumb, into small pieces. Check the consistency: the dough should be soft, but not sticky, but with moisture.
- (Optional): Add xanthan gum to help with gluten-free dough structure.
- Pay attention to the moisture content of the dough: rice flour dough may be a little drier. If the dough seems crumbly or dry, add a little milk to adjust the consistency (1 tablespoon at a time).
Practical and creamy banana filling (no cooking):
- In a bowl, mix the condensed milk, egg yolks and vanilla essence.
- Reserve the creamy filling.
Gluten/wheat free banana bread – ASSEMBLY:
- Cover the bottom and sides of the pan with 3/4 of the amount of dough. Fill at least 2 cm high on the sides.
- Spread half of the cream over the dough.
- Evenly distribute half of the ripe banana slices over the cream.
- Place the other half of the cream on the bananas.
- Spread out the remaining bananas.
- Cover the cuca with the rest of the dough, spreading it out well, cover as much as you can (consider that the dough will rise in the oven and any spaces will fill up during cooking).
Gluten/wheat free banana bread – COOKING:
- Place in a preheated oven at 180°C and cook for approximately 45 minutes or until the cuca is golden.
- Remove from the oven and let cool before unmolding.
FINALIZATION AND ASSEMBLY:
- Unmold and sprinkle with cinnamon powder to taste before serving (optional).
- Tip: Serve gluten/wheat free banana bread accompanied by a scoop of ice cream for a special touch.
- Store in the refrigerator for up to 3 days in a covered container.
