SWEET POTATO CHIPS Ingredients:

– 1 large sweet potato

– salt to taste

– pepper to taste THE

– olive oil to taste (or oil)

PREPARATION:

  1. Preheat the oven to 160°C to ensure more even cooking. If your oven does not have this option, use 180°C.
  2. Wash the sweet potatoes well and dry them with paper towels.
  3. Using a slicer (mandolin) or a sharp knife, slice the potato(s) into thin slices, about 5mm thick. If you don’t have a mandolin, use a knife and cut out slices.
  4. Place sweet potato slices between sheets of paper towels to remove excess moisture. This helps ensure the chips stay crispy.
  5. Grease the baking sheets with olive oil or oil.

PREPARATION:

Baked sweet potato fries:

  1. In a bowl, mix the sweet potato slices with the olive oil (or oil), salt and black pepper.
  2. Distribute the slices on the greased non-stick baking tray(s), without overlapping them.
  3. Bake for about 40 minutes in the oven at 160°C (or 180°C, if that’s the only option) – the time may vary depending on the power of your oven.
  4. Turn them halfway through cooking or when they start to brown on one side.
  5. The chips will be ready when they are golden and dry, with crispy edges.
  6. Remove from oven, turn off. Let them cool so they will become even crispier.

FINALIZATION AND ASSEMBLY:

  1. Serve the Baked sweet potato fries as an accompaniment to your main dishes or as a healthy snack.
