A tropical and refreshing pineapple vinaigrette, ideal for accompanying grilled dishes or serving at barbecues

Ingredients PINEAPPLE VINEGAR

– 2 slices of ripe pineapple, 1 cm each, cut into cubes

– 1/2 medium tomato(s), seeded, cut into cubes

– 1/4 piece(s) red onion, chopped

– 2 tablespoons yellow pepper, chopped

– 2 tablespoons chopped coriander

– 1/2 tablespoon(s) lemon (juice) + a little, if desired (depending on the acidity of the pineapple)

– 2 tablespoons of extra virgin olive oil

– 1/4 cup(s) canola oil (or extra virgin olive oil)

– salt to taste

– pepper to taste THE

PREPARATION:

  1. Separate all utensils and recipe ingredients.
  2. Peel and cut the pineapple into thin slices or cubes. When cutting, do it on an inclined plane to collect the natural juice of the pineapple. Tip: during preparation you can add pineapple juice to taste to adjust the sweetness and acidity of the vinaigrette.
  3. Chop the onion(s) and tomato(s) into cubes.
  4. Remove the seeds and the white part, cut the yellow pepper into cubes.
  5. Wash well, chop the coriander. Book.

PREPARATION:

PINEAPPLE VINEGAR:

  1. In a bowl, mix the diced pineapple, tomatoes, onion, chopped yellow pepper and cilantro.
  2. Add the extra virgin olive oil and canola oil (or extra virgin olive oil), stirring gently to incorporate the flavors well.
  3. Add the lemon juice, taste and adjust the quantity to taste, depending on the acidity of the pineapple.
  4. Season with salt and pepper to taste.
  5. Cover with cling film and leave to rest for 10-15 minutes in the fridge to allow the flavors to blend.

FINALIZATION AND ASSEMBLY:

  1. Serve the pineapple vinaigrette as an accompaniment to grilled meat, fish or barbecue. It’s also great served with a green salad, to create a delicious tropical salad.
