Plum muffins

Ingredients:

  • 1/2 cup (tea) wheat flour
  • 1/2 cup (tea) wholemeal flour
  • 1/2 tablespoon of yeast
  • 1 cup (tea) skimmed milk
  • 1/4 cup (tea) canola oil
  • 1 egg white
  • 3 tablespoons of honey
  • 1 teaspoon lemon zest
  • 10 tablespoons corn breakfast cereal (such as Corn Flakes)
  • 1/2 cup chopped black plums
  • 2 tablespoons of wheat germ

Preparation method:

  1. In a bowl mix the flour and yeast and set aside.
  2. In another bowl, mix the remaining ingredients and let sit for 5 minutes.
  3. Add the reserved flour and yeast and mix until smooth.
  4. Line greased muffin tins with greased baking paper, spread batter and bake in preheated medium oven for 25 minutes or until an inserted toothpick comes out clean.
