Healthy Homemade Nuggets in the Airfryer: Preparation and Shape:

  1. Place the chicken, sweet potato and onion cubes into the food processor.
  2. Add the salt and pepper.
  3. Add the oat flour and work until you obtain a smooth mixture.
  4. With your hands greased with a drizzle of oil, take a portion of the dough and shape it into croquettes.
  5. Arrange separately on a plate or pan and place in the freezer for about 15 minutes to firm up.
  6. The croquettes can be cooked without breading, as long as they are firm, thus obtaining a lighter result.
  7. To make them more similar to traditional ones, pan them following the instructions below,

Nuggets – Breading (optional step)

  1. If you prefer breading, place the egg(s) on a plate, season with salt and pepper and whisk to combine.
  2. Put the corn flour on another plate and the corn flakes on another.
  3. Dip the croquettes first, lightly in the corn flour.
  4. Next, dip in the beaten eggs and drain to remove excess.
  5. Finally, cover the corn flour, pressing until you obtain a uniform and well-fixed layer.

Homemade Healthy Chicken Nuggets – Baked:

  1. Preheat the Airfryer to 200ºC.
  2. Brush or spray the croquettes (breaded or otherwise) with a drizzle of oil so that they acquire a more golden colour.
  3. Arrange the croquettes in the Airfryer basket, without overlapping them, leaving a small distance between them to allow air circulation – depending on the quantity of croquettes and the size of the basket, prepare in stages.
  4. Place the basket in the drawer and insert it into the appliance preheated to 200ºC.
  5. Close the drawer and cook for about 20-25 minutes.
  6. If necessary, adjust the cooking time, as it depends on the power of your equipment.
  7. Turn off the Airfryer when the nuggets are crispy and golden on the outside and soft on the inside.

FINALIZATION AND ASSEMBLY:

  1. Remove the Homemade and healthy chicken nuggets from the Airfryer and serve immediately.
  2. Serve with your favorite sauces (optional) and a fresh, dressed salad.
