Recently the house, under the leadership of Mauro Clemente, was awarded in the prestigious world ranking of the 50 Top Pizzas, placing Campo Belo and Brazil on the map of the best pizzas in the world.
Neapolitan pizza is prepared with high-quality input, with techniques brought directly from Naples by master pizza chef Davide Civitiello, the team’s mentor and responsible for ensuring that true Neapolitan tradition is respected.
What to order from Unica Pizzeria?
For starters, it’s worth ordering the Arancini (crispy risotto gnocchi filled with Neapolitan sausage and broccoli) and the Tris di Montanara, a fried pizza dough.
One of the concerns of the house, in fact, is working well with appetizers and fried foods. Mauro is keen to underline innovation. “Our fried foods are prepared with an innovative and natural Italian product, which improves the sensorial quality and is healthier than conventional oils.”
The house also has a gluten-free dough, made with a special Italian flour, which has already won over customers.
When you choose the Pizzeria Unica tour you can take two routes. On the one hand, classics such as the always accurate Margherita (tomato sauce, buffalo mozzarella and basil), Marinara (tomato sauce, sliced garlic, Sicilian oregano and basil) and Diavola (tomato sauce, fiordilatte mozzarella and Italian spicy salami ).
But you can go about it in bolder and even tastier ways. The house has, as an option, the delicious Mortadella e Limone (fiordilatte mozzarella, Sicilian lemon, Italian mortadella, pistachio, black pepper and basil), the Tartufata (pecorino romano fondue, fresh sausage and parsley with black truffle) and the Burrata e Pesto (tomato sauce, red and yellow cherry tomatoes, fresh burrata cream, Genoese pesto, grana padano flakes and basil).

For Mauro, being rewarded is more than an achievement, it is a responsibility. “Being recognized for our work gives us the certainty that we are on the right path. It keeps us motivated to continue offering the best, always with the responsibility to live up to the recognition,” he says. As Sei Shiroma says, it is the moment of greatest commitment.
In Sao Paulo, a city with many gastronomic options, standing out is a constant challenge. Mauro recognizes this and sees differentiation as a continuous job. “We don’t stop researching pizza, the market and hospitality. That’s how we keep our customers interested and continue to innovate,” he says. The certification of the Vera Pizza Napoletana Association (AVPN) also guarantees that Unica remains faithful to its traditions, without losing sight of modernity and new needs.
For the future, Mauro’s vision is clear: continue to raise the standard that has already brought so much recognition. “The important thing now is to increase our requests. It was this search for quality that placed us among the hundred best pizzerias in the world”, he comments. And for him the success of Unica is directly linked to customer satisfaction, above any award or ranking. “We want people to leave here satisfied and happy to recommend us. What matters is the experience we offer,” says Mauro.
