  • 3 diced aubergines
  • 1 yellow pepper chopped
  • 1 red chilli chopped
  • 1 onion chopped
  • 1 cup seedless black raisins
  • 1 cup chopped green olives
  • 1/2 cup chopped walnuts
  • 2/3 cup (tea) olive oil
  • 4 tablespoons of vinegar
  • 1 tablespoon brown sugar
  • Salt to taste
  • Slices of Italian bread to accompany

Preparation method:

  1. In a bowl, mix all the ingredients until smooth.
  2. Pour into a mold and cook in a low, preheated oven for 40 minutes, turning halfway through.
