SPRING ROLL DOUGH Ingredients
– 3/4 cup(s) of wheat flour
– 2 tablespoons of corn starch
– 180 ml of water or as much as necessary to work the dough
Ingredients for the banana spring roll filling:
– 2 ripe bananas, mashed
– sugar to taste (optional)
– 1/4 lemon (juice)
Ingredients TO SPRAY OR BRUSH:
– oil to taste
Ingredients TO COMPLETE:
– sugar to taste
– ground cinnamon to taste
PREPARATION:
- The recipe provides a yield of 6 units for 2 portions, using a 20cm non-stick pan.
- Separate all ingredients and utensils for the recipe.
PREPARATION:
Banana spring roll – Dough (pancake):
- In a bowl, mix the wheat flour and corn starch with the water until you obtain a smooth mixture. The dough should have a light, fluid consistency, a little more liquid than pancake dough – if necessary, add more water in small quantities until you reach the right point.
- If necessary, pass the mixture through a sieve to remove lumps.
- Heat a non-stick pan over low heat. No need to grease.
- Remove the pan from the heat, place a portion of the dough, about 50 ml, in the center of the pan and spread it quickly, evenly covering the bottom of the pan, using a brush.
- The mixture should be very thin and once dried it should be almost transparent.
- Cook the dough over low heat until the top is dry, about 2 to 3 minutes, without needing to turn.
- Set them aside, preferably without stacking them, to prevent them from sticking; if you prefer to stack them, place a sheet of absorbent paper between them.
Banana spring roll – Assemble and close:
- Preheat the Airfryer to 200°C while shaping the rolls.
- Wash the lemon and cut it.
- Peel and mash the bananas in a shallow dish, squeeze the lemon juice directly over them and mix.
- Add the sugar (optional) and mix again.
- Take a pancake and place a portion of the filling (about 1 heaped dessert spoon) on one side of the dough disc.
- On the side where the filling is, turn once, completing one turn.
- Lightly wet all edges of the dough with water (use your fingers or a pastry brush) to help the edges stick together.
- Fold the sides of the disc over the filling and gently press the edges to make them adhere.
- Then complete the closure by tightly rolling the roll until it is completely closed, making sure that the filling is well covered inside the dough.
- Repeat this process with all the dough discs.
Banana spring roll – Bake:
- Brush or spray the rolls with oil and place them in the Airfryer basket, leaving space between them to allow air to circulate. If necessary divide into several parts to accommodate all the rolls.
- Place the basket in the drawer and insert it into the appliance preheated to 200ºC.
- Bake for 20-25 minutes or until the rolls are golden and crispy – the time will depend on the power of your equipment.
- Halfway through cooking, turn the sandwiches to make sure they are evenly golden and crispy; if necessary brush again with oil.
- While the cupcakes are baking, mix the sugar and cinnamon in a bowl.
FINALIZATION AND ASSEMBLY:
- Remove banana spring rolls prepared in the airfryer once golden and crispy.
- Since cinnamon sugar doesn’t stick to baked rolls, moisten them with a little water just to create a base for them to stick to.
- Then, roll them in the sugar and cinnamon mixture and serve hot.
