Eggplant bait

Ingredients:
- 2 aubergines cut into strips
- Salt and black pepper to taste
- 1 cup (tea) wheat flour
- 3 beaten eggs
- 1 cup and 1/2 cup (tea) breadcrumbs
- Frying oil
Sauce:
- 1 pot of natural yogurt (170g)
- 4 tablespoons chopped mint
- 2 tablespoons of olive oil
- Salt to taste
Preparation method:
- For the sauce, mix all the ingredients and set aside.
- Season the aubergines with salt and pepper.
- Dip them in wheat flour, beaten eggs and breadcrumbs.
- Fry, little by little, in boiling oil until golden brown.
- Drain on absorbent paper and serve with the sauce set aside.
